Dark Chocolate Turtles (2 versions – a bit healthier, uses no caramel)By Rita's KitchenFound this recipe in Womans Day magazine. It uses dates, no caramel (which I also love). At just 90 calories a pop, these treats will satisfy your sweet tooth with less fat and sugar than some other options. The dates work perfectly as a caramel stand-in with their sweet, sticky, and rich taste and texture, and the dark chocolate brings in antioxidant and a decadent flavor, then the pecans add in a nice dose of healthy omega-rich fats, magnesium, and manganese.
Gourmet Mushroom RisottoBy Rita's KitchenAuthentic Italian-style risotto cooked the slow and painful way, but oh so worth it. Complements grilled meats and chicken dishes very well. Check the rice by biting into it. It should be slightly al dente (or resist slightly to the tooth but not be hard in the center). A new Easter dish - picture will be added later.
Pickled Eggs (Beets, Rosemary Garlic, Dill and Veggies)By Rita's KitchenPickled Eggs are an appetizing and mouth-watering, ready-to-serve snack made from hard-boiled eggs preserved in vinegar and brine. They are wonderful and have a tangy combination of sweet, sour, and salty. This is what makes it so versatile and can be served in many ways. This recipe is not "Picky husband approved", and he will not try them.
Bok Choy with Garlic and Chilies (Pair with Miso Salmon)By Rita's KitchenSteve and I watched a cooking show online for Mizo Carmelized Salmon and Bok Choy as a side dish. Very different, very flavorful, can get a bit too hot (spicy) if you are not careful. A nice dish for a special occasion. We also served with rice on the side.
Chicken Marinade (Husband approved)By Rita's KitchenThis unusual combination of common ingredients is fabulous! I made this marinade to celebrate a wonderful friends' birthday. She and my husband both liked the flavor. I grilled this chicken indoors on the Breville indoor grill - perfect.

Strawberry Pudding (Justin Campbell request; just like Banana Pudding)By Rita's KitchenThis is a fabulous twist on an old classic. This strawberry pudding is just as good as banana pudding and made the same way except you use strawberries in the recipe instead of bananas. We love it!
