Stuffed Zuchinni BoatsBy Rita's KitchenThese stuffed zucchini boats are filled with a hearty meat mixture, then topped with plenty of cheese and baked to perfection. An easy low carb meal option that the whole family will enjoy!Gyro MeatBy Rita's KitchenWe have made gyros using this method, and actually smoking a leg of lamb. It is a bit weird, but our preference is this method.
Everyone in my family enjoyed this, including Steve, Joshua, Cassidy and the Weber family. And it is very easy! Always a bonus!Honey Mustard & Onion Pretzel BitesBy Rita's KitchenCrunchy pretzels are a satisfying snack all on their own, but give them a delicious flavor infusion and you've got these Honey Mustard & Onion Pretzel Bites on hand. They're utterly addicting, and incredibly simple to throw together. You can enjoy these seasoned pretzels whenever a craving strikes!
These are pretty yummy! Husband and Weber family approved!Old-Fashioned Apple DumplingsBy Rita's KitchenThese homemade apple dumplings are easier than you’d think – Granny Smith apples are peeled and cored, stuffed with butter and cinnamon-sugar, wrapped in a pastry crust, and covered in a buttery brown sugar sauce. Baked until golden, they absolutely melt in your mouth!Ultimate Twice Baked PotatoesBy Rita's KitchenI find this recipe better than the other twice baked potato recipe I posted. These have always been a big hit. These potatoes are a wonderful side dish for any meal and are terrific heated up the next day. An easy side dish with lots of flavor.Pumpkin Cream Cheese MuffinsBy Rita's KitchenPumpkin Cream Cheese Muffins – moist pumpkin muffins loaded with pumpkin spice and a rich swirl of cream cheese. These muffins are so perfect for fall! Chelsea found this recipe, and requested these for her birthday, she loved them!!Pico De GalloBy Rita's KitchenThis isn’t a meal, but it’s yummy. Oh, I absolutely love Pico de Gallo—the freshness of tomatoes, the clean flavor of cilantro, the cool, crisp wonderfulness of it all.
Here’s the most important thing I learned about Pico, the tomatoes are only one part of the ultimate product. The jalapenos, the cilantro, the onions—they require equal billing with the tomatoes to make Pico de Gallo work.Jalapeno DipBy Rita's KitchenDips are one of my absolute favorites! And this Jalapeno Dip has the most perfect spicy, tangy combination that will make you want to make it everyday!! YES, it really is that good!Raspberry Cream Cheese Coffee Cake (Steve approved)By Rita's KitchenThis coffee cake is intended to be served warm, but Steve liked it much better the next day after it had been refrigerated. Or maybe it just needed to sit a bit, before he dove into it....lol.7 Layer Taco Dip with Tortilla chips (Justin Campbell approved)By Rita's KitchenSeven layer taco dip made with refried beans, sour cream, and salsa is the perfect platter for parties and family get-togethers.
This is one of Justin's favorite appetizers. Serve with plenty of tortilla chips!Dark Chocolate Turtles (2 versions – a bit healthier, uses no caramel)By Rita's KitchenFound this recipe in Womans Day magazine. It uses dates, no caramel (which I also love).
At just 90 calories a pop, these treats will satisfy your sweet tooth with less fat and sugar than some other options.
The dates work perfectly as a caramel stand-in with their sweet, sticky, and rich taste and texture, and the dark chocolate brings in antioxidant and a decadent flavor, then the pecans add in a nice dose of healthy omega-rich fats, magnesium, and manganese.Gourmet Mushroom RisottoBy Rita's KitchenAuthentic Italian-style risotto cooked the slow and painful way, but oh so worth it. Complements grilled meats and chicken dishes very well. Check the rice by biting into it. It should be slightly al dente (or resist slightly to the tooth but not be hard in the center).
A new Easter dish - picture will be added later.Strawberries and Cream Angel Food Cake RollBy Rita's Kitchen A delicious dessert roll filled with fresh strawberries and a cream filling.
We are making this for Easter dinner, hopefully it is a keeper recipe.Pickled Eggs (Beets, Rosemary Garlic, Dill and Veggies)By Rita's KitchenPickled Eggs are an appetizing and mouth-watering, ready-to-serve snack made from hard-boiled eggs preserved in vinegar and brine. They are wonderful and have a tangy combination of sweet, sour, and salty. This is what makes it so versatile and can be served in many ways.
This recipe is not "Picky husband approved", and he will not try them.Citrus Cookies with Citrus Icing (Orange, Lemon, Lime)By Rita's KitchenThese soft, buttery orange cookies are flavored with orange zest and orange juice, and iced with a sweet orange glaze. Their old-fashioned flavor will remind you of your grandma's kitchen!
These cookies are approved by Ethan Campbell and Steve Walker.
The grapefruit did not have as much flavor as we were hoping for. So far, the lemon and orange are top runners. Still need to make the lime.
Ethan C. loves these cookies in lemon!
