Ingredients
8 8 baking potatoes
2 sticks 2 butter (I try to use less)
1 cup 1 sour cream
1 1/2 – 2 cups 1 1/2 – 2 cheddar or jack cheese
1 cup 1 bacon bits
1/4 – 1/2 tsp 1/4 – 1/2 Lawry’s seasoned salt
black pepper
milk or Half-n-Half (if necessary)
2/3 cup 2/3 green onion (optional)
Directions
- Preheat oven to 400 degrees.
- Wash, then place eight baking potatoes on a cookie sheet.
- Bake in a 400-degree oven for 1 hour and 15 minutes, ensuring they’re sufficiently cooked through.
- When potatoes are cooked, reduce the oven to 350 degrees.
- Begin slicing two sticks of butter into pats (or less, if you choose) and place butter into a large bowl.
- Add 1 cup of bacon bits and 1 cup of sour cream to the butter.
- Remove the potatoes from the oven, slice each in half, then scrape out the potato filling into the bowl with the other ingredients.
- Lay the hollowed-out potato shells on a cookie sheet.
- Grab a potato masher (hand-held, not electric), and smash the potatoes with the other ingredients.
- Add 1/4 – 1/2 teaspoon of Lawry’s salt and pepper.
- Add 1 cup of shredded cheese and slice green onion and add (optional).
- Fill potato shells with potato filling.
- Top with additional cheese.
- Place into 350-degree oven, bake 15-20 minutes.
