This is a fabulous twist on an old classic. This strawberry pudding is just as good as banana pudding and made the same way, except you use strawberries in the recipe instead of bananas. We love it! A great dessert your family and friends will enjoy.

Ingredients

  • Pudding and Base Ingredients
  • 4 cup 4 Strawberries, capped, sliced

  • 50 50 Nilla Vanilla wafers

  • 3/4 cup 3/4 Granulated sugar

  • 1/4 tsp 1/4 Salt

  • 1/4 cup 1/4 All purpose flour

  • 1 cup 1 Milk

  • 1 1/2 cup 1 1/2 Evaporated milk

  • 4 4 Egg Yolks

  • 1 tsp 1 Vanilla flavoring

  • Meringue Ingredients
  • 4 4 Egg whites

  • 1/2 cup 1/2 Granulated sugar

  • 1 tsp 1 Vanilla

Directions

  • Pudding and Base
  • In a 2 quart casserole dish layer the vanilla wafers and strawberries. (I use 10 of the wafers to go around the side of the bowl just because I think it is pretty this way).
  • In a saucepan on top of the stove with a whisk mix together the sugar, salt, flour, egg yolks, and milk. rnrnCook on medium heat, stirring continuously with whisk, about 7 or 8 minutes until thickens.rnrn(It will burn very easily so be sure to stir).
  • Remove from stove and stir in vanilla flavoring. Pour over wafers and strawberries.
  • Meringue Topping
  • Beat egg whites on high until stiff and peaks form.
  • Add sugar and vanilla and beat into egg whites.
  • Spread over pudding and bake in 350 degree oven until browned. (I have just put it under the broiler until it browns that way, too).
